Not being the sharpest knife in the drawer concerning shotguns, I was wondering what differentiates a "skeet " 1187 from any other??

Factory skeet barrel, basically. 'Skeet' is both a shooting game, and a measure of shotgun choke (basically very little choke). My 1100 'skeet' barrel came with a large white front bead, and a small mid-bead, when the ordinary barrels only have a silver-colored front bead and no mid-barrel bead.

Can't say for sure if that's the only different in the 1187 'skeet' model, though. I'm thinking those might have shorter magazine tubes but can't say for sure.

skeet,longer barrel 28 to 30 inch,big beads,flat rib,and skeet chokes.trap,longer barrel,30 up to 36 inch,big beads,tight chokes.and lots of money.

Trap and skeet grade guns are built to a little higher standers. They realize how many thousands of rounds these guns are going to shoot in the hands of a trap or skeet shooter. The parts are made to a little closer tolerance to allow for the extra wear, and the rockwell is set a little different then a field grade to take the added abuse these guns go through.

Higher Stock comb than field for trap, lower comb for skeet than field. Usually a wider rib and higher rib on trap guns. Skeet guns usually wider than field models, but less than trap. center bead in rib is normal for both skeet and trap.
