I found an old Weaver variable, M9V. It looks to be in real good condition. Not being familiar with these, I was wondering if it would be worth mounting. I'd heard the older variables changed point of impact when the magnification power was changed.

Might...but that's true of moern variables as well. Older ones are a little more prone to it than new ones simply becasue the moving parts have had a chance to wear and build up a bit of slop.
Weavers were good scopes in their day and I did use many of the old Weaver K and V's. The optics are good glass, but not coated with the same modern coatings, so light transmission isn't quite up to modern scopes...this is no big deal unless shooting at dawn or dusk.
I like the scopes and rifle sto "match"...old scope on an old rifle seems right to me.

Try it. Mount it somewhere it wont move and look through it while chainging the power. Also move your eye around and see what the crosshairs do.
