Last year I got tired of the cost of taking my deer to the locker so I decided to try making my own summer sausage. I made an electric smoker and bought an antique lard/sausage press off Ebay and started processing my own deer. The process was quite easy and the summer sausage turned out great. For anyone thinking about it the initial investment seems like a lot but I think it pays for itself in the long run. The cost of processing a deer is less than half the price my local locker charges. Here is a pic of my homemade smoker. I have never posted pics before so I hope it works.

I also cut up my deer.I make jerky,summersausage,pepperoni.Great looking smoker ever try fish? Those guys at the locker plants should process deer by size... small,med,lg. not one size fits all. The prices are too high for deer, I think all of us should boycott them for 1 year maybe they would drop their prices. Of course I would still do my own. Q-harley

Great looking smoker! Bet your venison tastes good too.
It looks like a couple of oven thermometers are lying on the top shelf. What temp. to you target when smoking venison?
