Caught a few of these little zippers last week. Man do they fillet easy. I scale em, slice off each side and snatch out the ribs with pliers.
Take a cup of corn meal, mix a teaspoon of Tony's Cajun Seasoning in it. Dampen, salt and dredge the fillets then drop in 350-400 degree peanut oil until they float. Don't take long!
I fry up some fresh cut potatoes and then dream I was in Scotland as I feast!

Here on the Mississippi/Louisiana gulf coast, our most abundant game fish is the "Speckeled Trout". Second is the Red Fish. These two species, along with the Flounder, are very popular menu items in most gulf coast resturants, from Texas to Florida.
The next time you are at the grocery store, pick-up a box of hush puppy mix. Just follow the directions on the box, drop'um in the hot peanut oil with the last batch of fish and serve hot.
Most people, including resturants, tend to overcook seafood. The time to take the fish filets, shrimp or oysters out of the grease is when you think they are "almost done", and they will be just right.

I've never tried Speckled Sea Trout, but dang, that sounds good, fellas!

Nitro, Hush puppy mix???? I suppose you like instant grits also! :D Say it ain't so! Hush puppies are easy to make, I'll post a recipe when I get home. BTW, I am an Executive Chef by trade, Been cooking for a living since I was 14.

Haven't really learned to like fried fish as much as most folks...still like fish, but will broil it, bake it, BBQ it, blacken it...including Special trout (esp. as they've toughened the limits of Red Fish. Flounder, on the other hand, is an excuse to eat crab stuffing.
