1 lb ground, cooked armadillo 1 egg 2 tbsp minced celery 2 tbsp minced onion 1 tbsp minced parsley 1 tsp salt 1 tsp ground pepper hot peppers- your choice 2, at least mix together, form into 1 inch balls and refrigerate for 1 hour. roll meat balls in flour fry in hog fat till golden brown-enjoy Q-harley

Never ate armadillo, but I'd give it a try. If an animal grows a shell like that for protection from predators it must taste good. I've been told they make excellent fajitos.

FYI - The armadillo is the only known mammal to have identical quadrupalets as the normal litter and one of the few besides humans that can contract leprosy.

I have killed lots of Armadillos, and my wife said that she had tried it, but didn't like it. The meat does look good when skinned out. Onew of these days I may try it. My only hang up with them is that they carry leoprosy. I am not sure that trying to eat one would out weigh the thoughts of contracting the disese. JMO.

Uh, why were you skinning the Armadillo?

I would like to kill some out of my yard but they don't come out until past my bedtime apparently. I did manage to shoot one and the bullet tore him up pretty good. The meat was kind of strange looking, almost like veal, not the deep red of most wild animals.

Try them first and if they are really good they're bad for you. Probably loaded with those trans fats they outlawed in New York City.
If they really don't taste too good , eat up, they're probably good for you!

Heres the deal. You invite your buddies over for eats and boxing on T.V. These are the same former friends that helped you kill the meatball recipients. After a few drinks you break out a bowl of meatballs that you deep fried outside on the front deck. One friend who I also call Brother-in-law eats most of the meatballs, gets sick after I tell them what they just ate and goes home. After that I BBQ steaks and most everyone forgives me for the guinea pig treatment.

My Dad wanted to try one out as catfish bait, and I knew someone that wanted an armadillo shell. Lots of folks eat armadillo and possum both. In fact, as far as humor goes, I have heard armadillos referred to as both 'Possum on the Half Shell, and during the Depression, "Hoover Hogs".

I have taken lots of Armadillos, but I never thought about eating them. My wife insisted we cook up some prarriedogs, but I would not have it, she tried it and said it was not very good.

Now, if you find a nice possum, ummm!
