Within the next few weeks they will be plentiful here. The big Black morels can cause a slight indigestion problem for (some) people when consumed with alcohol. "Peckerheads", or half free morels aren't nearly as tasty as the yellow morels. Iv'e noticed here that there are some nice genetic oddball early yellow morels that come on nearly the same time as the black morels and peckerheads. It's along the edge of the cornfield in the same place every year. Later on, near the end of the season you can find HUGE yellow morels and it's all genetic so if you know where some really big ones were found look right in the same place next year. There's another small variety that grows under tupip trees in some places. Of course watch out for the false morels. I think there are three types but I've only found two. One type has a chemical makeup similar to rocket fuel so... don't eat it if it looks different!
I hunt fungi year-round and have (indentified) 80 kinds in all. "Oyster fungi " should still be around. It's a type of shelf fungi that tastes similar to oysters. Iv'e found "Chicken Fried Mushrooms" in the fall and they taste exactly like KFC...No joke!. I cook them in batter like you would chicken.
One of my favorite meals is a nice steak cooked on the grill with fried morels and wild greens and some good beer to wash it down with! I only cut the larger ones in half (or quaters) when I soak them for a while in salt water. I then remove the water and put some damp paper towels over them. This way they don't get soggy but the lil' bugs are gone. I dip mine in egg first and then flour and fry them golden brown. Some people use crushed crackers instead of flour. I suppose that would work fine with oyster mushrooms 'cause that's how the fried oysters are made on Thanksgiving day.

You feller's sure know more about morel's than I do. Q-harley got it right on the recipe though. Is "arterey cloggen good food" in my opinion! I prefer more pepper than most. Tobbasco is fine! Goes well with anything I can think of including breakfast cerial!

How about other edible fungi I've found in my yard? I'd at least get a field guide first if you want to collect anything I am describing here. There are some poisonous and toxic lookalikes so you must know exactly what you have before eating anything. Better safe than sorry. Only a small percentage of mushrooms are edible and taste good.
There's some miniature Chanterelles that grow in a small patch along the lane in summer. In the grass there's wild Agaricus mushrooms like the domestic ones you would buy in the market. I've found big Red Boletes under the beech trees and maybe they might be good in salad. There are some edible Russulas, one kind tastes like pepper. Once I found some tasty Lepoitas... (tall thin stalk with a wide flat cap and double rings). The caps are just the right size for grilled mushroom burgers. There are yellow "Chicken Mushrooms" in the grass at the base of trees sometimes and those don't taste bad. There are more kinds of wild mushrooms I've found to be good tasting.
I came across a 30 lb. cluster of "Hen Of The Woods" growing on a stump. They taste really good and are also called Maitake in Japanese. Supposedly these prevent cancer. Fungus is a good thing. :p

I like lots of different mushrooms.I've tried morels,puffballs,boletes,sulfur shelf and coral. I've even tried some little dried up looking mushrooms a friend had but they didn't have much taste. :D I prefer morels.Q

A story from about "half of a lifetime" back: I was at a bar. The tender, a couple of other cardplayers, me and my good dog Blu.
Two "guys" walked in asking if anyone "wanted morel mushrooms"? They were carring twelve-pack boxes of them.
"How much?"
$1.00 per box.
They had a pick-up truck with a topper full of morels in boxes!
SOLD! :D !! Four of us bought the whole truck!
May have been $20.00 for my share?
Everyone left the bar to "put-up" mushrooms!
Them guys found the "motherload"!
I guess I am a couple of weeks away from finding my own? It is kinda cold here now.
"Radio says" we have feral pigs in Iowa now? Sounds good with mushrooms!

It's going to be awhile before they start coming up in MN. We usually start looking in late April/early May. We never get any big hauls... a good day means 1/2 a grocery bag or so.
Curious, does anyone cook them with another method than the simple breaded/fried or with beef?

Why change perfection? They are not around very long. I have had them with chicken liver and gizzards and enjoyed them! The cooking method remained the same.
If you're "into different", try them raw with suschi :) !

I love mushrooms but there is no inhereited knowledge around here about them. I have googled it and it seems there are edible mushrooms in Georgia.
FWIW, there is one local restaurant that takes the standard grocery store button mushrooms, quarters them and then toss them in cornmeal and deep fries them. They are delicious.

Well, I'm just saying that if you get a whole ton of mushrooms some day it wouldn't hurt to try something new. I'm not gonna argue against a good gray one fried (not too fried) and lightly salted is about as good as it gets, but you'll never know if there's better until you try...

Sorry for the delayed responce Q-harley. I did not see this thread as "active" until now.
I'm "good" with most any fish! Draw the line with carp. They are fun to catch. Bluegiil and crappies are wonderful with morels (Oh Man! That is NOT what I'm having tonight! Leftovers :( )
Freshwater catfish also works. One to two pounders.
I have been over 70 degrees here as of late. The time for morels is near :D .

I think the 1-2 lb. channel cats would be good... I like fish with a little more flavor than panfish.

Hey Q, I had my first batch of freshly picked morels, fried in butter and garlic. Picked a bit over a quart out turkey hunting and they were delicious! The mushroom picking was definitely better than the turkey shooting, but not the turkey hunting!

Nope! Morels. Breaded and cooked in butter. It is like "having stuffing with turkey here". It is very seasonal. Kinda like corn on the cob. You can buy "toad stools" on ebay if you choose too! Buyer BEWARE!

I kept thinking with all the rain we have had lately I might find some more. No luck.Glad you found some Shawn, I never thought about frying them with garlic but it sounds good. Cheezy is it time for morels in Iowa yet? I found a company that sells mushroom spores, "fungi perfecti" ,They even sell morel spores. Q
