Pepper sticks! It's the best way we've found to eat them and you can blend in the Snows and trash ducks and nobody will know the difference!

Sorry, At the end of the season my one buddy gathers up everybody's geese and ducks they don't want to cook at home and takes them to a butcher who makes the pepper sticks. I just eat them! :D
Oh, we do draw the line at sea ducks. They don't even make good sausage! We give them all away. The problem is people will only take them once unless you're a real salesman! :D

My neighbor drops a few geese and ducks every year (Canadas mostly), and he uses my same deer jerky recipe (posted on this forum) and smokes them using my smoker. If it wasn't for the meat consistency, it's hard to tell the difference between elk/deer and goose/duck (good, BTW!) so you might want to consider that route. Good luck with the shooting!
