Just killed a whitetail doe so... Its time for deer dogs. I use Hi-Mountains bratwurst sausage making kit and add 5 jalopeno peppers with 70% deer and 30%pork to 24 pounds of meat. I bake for 1 hour in the oven at 200 f then 2 hours in the smoker with heavy smoke. Enjoy.Q

Boy that sounds good. I've got a fella up the river from my place that does wild game. He's been doing mine now for 15 years plus. Don't know what he uses, but I keep coming back.

One thing for sure that wild game sure makes great stuff. I've taken to having lots of jerky made from mine. With two teenagers living in the house it goes to lunch with them.
