Years ago when in Alaska, we use to take the large roasts from one Moose hind quarter, and have Mike's Meats, in Eagle River, work it up in to pastrami. It certainly made some fine sandwiches. Being game meat, it comes out very lean. It might be something to consider doing with deer or elk. Makes for a nice change in eating...
Anyone else out there had some of their game meat made up in to pastrami?

I'm gonna be honest here. I do not know the definition of "pastrami". Further, I've never ate moose.
I suspect that I might like it though?
Explain it to me please. Make me hungry!

I do not know how pastrami is made either Cheezywan, but I thought it was a cured-type sliced meat, with some seasoning (similar to roast beef, but different processing and seasoning). From my limited experience with moose, it has to be good though.;)
It's smoked corned beef with some extra spices rubbed on the outside before smoking. I believe "official" pastrami is made of beef brisket.
Corned beef is pickeled by soaking for a good while in brine.

The sandwichname: pastrami on rye bread, might ring a bell with some folks?
If not, then the next time you're around a real deli sandwich shop, order a: pastrami on rye bread, and give it a try, they are right tasty. Might as well get the deli barrel pickle to go with it...

Yeah, I'll eat that! I want some hot peppers on mine. Gravy on a "HOT MOOSE SANDWICH" sounds good as well.
Moose are rare here in Iowa(a few wander in. Not legal game.)

Smoked....corned....brisket....don't know how you could go wrong, whatever the animal. Thx Ken for the info. Might have to try this with some elk, if I can find someone that can do it (it's not me, that's for sure!).

I had some pastrami done this year from the deer I got. It is really good. I am glad I like it cuz I got a whole bunch of it.
