I think you will find that the velocities for the .375 JDJ are taken from a 14" barrel while the .375 Win are from a 20" barrel. You have to remember that many of the .375 JDJ's started life as .375 Win Contenders. In barrels of similar length the difference in velocity will probably be closer to 250/300 fps plus a HUGE difference in recoil.
You might want to check out one of the other T/C gunsmiths like Mike Bellm, Virgin Valley or even T/C's own custom shop to see what they can come up with for you. However, I have two barrels from SSK (a .309 JDJ that started as a .30-30 and a straight custom .416 JDJ - which is for sale - cheap) and I am pleased with the work they did at the price, but feel there are other smiths who might be able to do it just as well and a bit cheaper.
If all you are after is something to shoot at deer, elk, moose or black bears than get the .375 Win. You can always have it rechambered later if you feel you really need to shot past 100 - 150 yds.
